About Fair & Square.
Fair & Square is a Detroit-style pizzeria built around our sourdough crust. We make it in-house every day from a starter we feed daily, using locally grown organic flour and authentic Wisconsin brick cheese. As far as we know, we’re the only shop in Rhode Island making Detroit-style pizza on a sourdough crust.
Our dough is thick, like focaccia, with a crispy exterior and a light, airy interior. The wild yeast from the sourdough imparts a complex, artisanal flavor to the dough. It’s then baked in our seasoned steel pans where the cheese not only melts on the top of the pizza, but between the crust and the pan as well. This is where the magic happens: The fat from the cheese fries the exterior of the dough, which is what creates the signature dark, caramelized crust that defines Detroit-style.
The mission of the shop is in the name: truly great pizza at a fair price. We kept the menu small and the shop lean on purpose. Fewer items and a leaner shop help lower our costs, which allow us to provide something really special at a price people can actually afford.
Fair & Square shares a building and ownership with Riccotti’s next door, the Bristol sandwich shop my family has run for over 50 years. Gift cards and rewards points work at both. Riccotti’s has been here since 1971 because Bristol kept showing up. We’re hoping you’ll show up for this one too.
